Siolim Cooking School offers a variety of cooking packages and training courses facilitated by specially trained chefs.  Here, you will experience and discover the joy of learning new cuisine and traditional Goan cooking.  The chef Lucie works with Goan cooks to teach the recipes that have been passed down to them from generation to generation.

THE COOKING SCHOOL

The Siolim Cooking School was opened in October 2012 and is located in the near- untouched village of Siolim, on the hilly road that connects Arpora to Siolim, directly across the street from Little Siolim hotel. The school is set in an open space of the garden of a traditional Goan- Portuguese house, amidst lush trees, tropical flowers and organically grown herbs and vegetables. Here, participants have their own work stations and learn traditional cooking on individual stoves. Located near the UNESCO merited heritage hotel, Siolim House, guests may opt to stay at the hotel while they enjoy extended cooking courses.

THE COOKING CLASS

  • The School offers a range of courses; Goan Cooking Class With or Without the Market Tour, Raw Food Workshop and Stay and Cook Package, amongst others. 
     
  • Participants can additionally tailor their individual courses by selecting what they want to learn and which menu they prefer to bring home with them.  At Siolim Cooking School, guests can master traditional Goan food with local and expert chefs.  
     
  • Participants will learn about the exotic spices and blends used in everyday Goan dishes, and actively prepare a traditional generous feast that will then be enjoyed by the students together.
     
  • A typical day at the Siolim Cooking School begins with a meeting at Siolim House, a trip to the fish market to choose the freshest fish, then back to the School where participants learn to prepare four popular Goan dishes, 
    • four popular Goan dishes, selecting from a list of various meat, seafood and vegetarian dishes, including crowd pleasers such as fish/prawns Caldine, Chicken Cafreal, Pork Vindaloo, Goan style Aubergines and Goan Pulao.

    • Classes and discussions are relaxed and friendly while completely hands-on.  Discussions include specific references to the role of food in Goan society and its ceremonial use and religious importance.

    • If selecting the "Without the Market Tour" option, you can simply join the class at the School and begin cooking with fellow students immediately.

    • At the end of your class, participants can enjoy their culinary masterpiece that they have prepared and also receive a certificate to bring home.

  • Classes and discussions are relaxed and friendly while completely hands-on.  Discussions include specific references to the role of food in Goan society and its ceremonial use and religious importance.

  • If selecting the "Without the Market Tour" option, one can simply join the class at the School and begin cooking with fellow particpants immediately.

  • At the end of your class, particpants can enjoy their culinary masterpiece that they have prepatred and also receive a certificate to bring home.

  • Lessons are between three and four hours and prices range from 1,000 to 2,500 Rupees.

THE STORY

THE LOCAL AND ORGANIC Siolim Cooking School was born out a French pasty master’s passion for tropical flavours and world cuisine. The school endeavours to offer an insight into Goan life, faith and culture by learning about its food, cooking methods and culinary myths.  The Siolim Cooking School believes it is important to preserve the way ingredients are grown traditionally and, as much as possible, organically, which is why they only source their produce from local villagers and markets who grow vegetables in their garden. They are also vehemently opposed to using plastic bags that causemuch of Goa’s pollution, choosing instead local and natural alternatives.  In keeping with the theme of sourcing ingredients from small local farmers and neighbouring villagers, the school grows a variety of herbs and vegetables in their own garden, to promote the idea that anyone can grow food and with simple techniques that avoid the use of chemicals.  

THE CHEF
Lucie is a food lover who likes to share her passion for fine dining and tropical flavours. She has been baking French pastries since she was 6 years old and has mastered all the classics. Six years ago, when she first came to the coast as a getaway from her expat Bombay life, she fell in love with local Goan cuisine. Since then she has moved to Siolim to be with her boyfriend and decided to respond to the demand of visitors wanting to learn traditional Goan dishes.

With the support of two Goan cooks, Jane and Eric, she shares her passion for cooking with her students with a warm hospitality that make her classes a fun and exciting experience.

THE COOK AND STAY

@ LITTLE SIOLIM (SIOLIM HOUSE)

Stay at Little Siolim and enrol for an intensive cooking experience.  This package will include trips to the fish and spice markets, learning and trying traditional recipes and making Indian staples such as roti and chai. 

Little Siolim has been designed from two 100 years old Portuguese houses that have been combined to form one house. It gives guests the experience of living in an ancient house with the comforts of a modern home. The architecture and design is an amalgamation of Portuguese, Sri Lankan and South East Asian designs created by the owner himself. The kitchen is modern and ideal for group classes.

 

PATISSERIE DELICIEUX

Opened in 2012 by Lucie Mason, in association with Siolim House, is Patisserie Delicieux, a traditional French pastry shop that follows the finest cake tradition in the world. This pattisserie- boulongarie offers a selection of fine pastries and breads that uses only natural ingredients and dairy products, no artificial flavors, no preservatives, no compounds and no substitutes.  With locations at Siolim House, Ashwem and  Miramar, as well as counters at Magsons Hymart and Inox, Panjim, Patisserie Delicieux additionally offers home delivery of cakes and desserts.
